Chai Masala - Spice Tea Blend




Chai is the most popular drink in India, no matter rich or poor. This recipe comes from my neighbor from Gujarat and I use it make Masala Chai for my family and friends. I love the taste of ginger, cinnamon and cloves.


Ingredients

  • ¾ tbsp black peppercorns

  • 16 green cardamom seeds

  • 16 whole cloves

  • 4 tsp ground ginger

  • 4 cinnamon sticks (each about 2 ½ cm tall), coarsely broken

Instructions

Grind all ingredients except the ground ginger in a mortar. If you are in a jiffy, you can use a spice grinder

Sift the powder into a bowl and mix well with the ground ginger.

Transfer to an airtight container or screw-top jar.


Tips

  • The spice mixtures should be stored in a dark place to preserve the essential oils.
