India has long been a popular destination for travelers, partly because of its amazingly diverse culture, geography, and rich history. It is a land of contrasts and extremes. If geography has an influence on the development of a people's cuisine, India has certainly benefited from it, as it has produced one of the richest and most diverse cuisines in the world. You could try a new dish every day and it would take more than a few lifetimes to exhaust the entire repertoire of Indian cuisine.
If you travel from the northeastern states to the south or from east to west, you will discover a distinct variety of flavors and spices. While wheat is a staple food in the northern, western, and central states, rice dominates in the south and east. While the intoxicating aromas of saffron and anise welcome you in Kashmir, you feel at home in Tamil Nadu with a hint of curry leaves tempered in oil. If you are interested in a diverse presentation of legumes in Rajasthan, you will be delighted by the great variety of fish in Bengal.
But even though the regional cuisines are very different, they do have some things in common. Indian food is healthy, with grains, legumes, and plenty of vegetables at every meal. The dishes highlight spicy, tangy, sweet, and savory flavors in exquisite balance and are much easier to cook than you might expect. In this blog, I want to dispel the myth that Indian food has to be complicated to prepare. Once you have basic spices on hand, you just need to throw them into a pan.
Use the best quality ingredients you can find, as good ingredients are essential for good cooking. Measure, chop, and lay out the ingredients before you start heating the pan. Taste each dish before serving and adjust the seasoning if necessary.
